Kerala Cuisine varies from the north to the south, from hills to backwaters and from community to community. Moplah (Muslim), Syrian (Christian) and different Hindu sects have all evolved their district styles and tastes when it comes to cooking.

The innumerable rivers and abundance of water have resulted in a society of people who are clean in their food habits. Cooking, to the older generation, was a ritual with no short cuts or substitutes. Utensils were earthenware or stoneware and the storing was done in China jars. Cooking was done with firewood over open stoves using sweet water drawn from deep wells. Even a simple meal was a treat fit for a king.
